Need some dinner ideas for myself and my 4 year old. Something easy. DH usually does all the cooking and he is out of town. Last night we had Totinos!! lol... Any ideas?

Hi, why not touch breakfast for dinner. Add bacon, sausage etc what like. Easy and quickish. Hope helps. cheers

Creamy Scrambled Eggs For 2 4 Eggs 4tbsp milk ½oz Butter - to taste in thin slivers Salt and freshly ground Black Pepper Put all ingredients into small pan, season to taste and beat lightly to mix thoroughly; Heat on low heat stirring often until starts to thicken; Stir continuously until mixture is formed and creamy, not watery; Serve

Miss out chilli and serve with fries etc. cheers. Pizza Style Cheese on Toast Serves 2 1 Tomato - finely chopped ½ Onion - finely chopped 120g/4oz Cheddar/Parmesan Cheese mix - grated Pinch Ground Cumin Small Piece (knob) Butter 1 to 2tbsp fresh Coriander or medley of herbs (Oregano/Basil/Parsley) - finely chopped Pinch Chilli Powder 2 slices Ciabatta/Chapata Bread Mix all ingredients together in a bowl; Toast bread on both sides; Spread cheese mixture on toasted slices, making sure toast is completely covered; Place under grill until cheese bubbles and browns slightly; Serve.

These are just a little (not much) labor intensive, but both you and "little fingers" would enjoy eating them (appetizers are good for a meal too and potatoes are healthy)... Serve with a small hamburger patty w/ketchup... Might be something you could make for DH in the future and surprise him?

No green pepper in this recipe, so it's a hit with kids. We added this to the menu at a children's camp, and it has been a favorite for several years. The mixture is thick, so they are 'neat' rather than sloppy. This freezes and reheats well.
