Bacon, red pepper, and green peas add color and flavor to a fried rice dish that makes a great substitute for the same old potatoes.

Hi Allie, cold rice is cold rice - fridge or room temp no diff as long cold for an hour or 2. Hope helps. cheers.

when i made it- mine was not cold- just cool- worked fine- just so it won't go to mush

i just threw mine in frezer- on sheet pan- about 10-15 minutes

I think the reason they ask for cold is that if you use rice that is still steaming hot from the pan it might get overcooked once tossed in a frying pan with other ingredients. I've never had that particular problem though, even with hot rice (maybe it was the brand? I like to use jasmine rice) -so I don't think it really matter. Just precook the rice and let it sit for a while until all the steam is gone -or refrigerate overnight if it's more convenient... really, you can't get wrong here. :)

I cooked the rice and planned to let it sit on stove until I need it. Then I thought maybe I should refrigerate it. Okay, I'll stick with the plan, thanks :)

I read the recipe and didn't see where it said "cold" rice. hmmm i thought it said cooked rice... my eyesight must be getting worse lol.. for this recipe, I would use rice already prepared,earlier. It all gets heated together.
