Some of you may remember I'm cleaning out my pantry, frig, and freezer. I'm at the end of groceries, so I don't have much to work with. Here's where you and your creativity comes in: I want to use some left-over store-bought Southwestern Dip (sour cream based) in a very simple chicken dish. Suggestions?

Great idea, Nurse Ellen. Maybe I can make this next week since last night's dinner, Quick and Easy Mexican Chicken, was also cooked with salsa. Thanks!

Use it in place of the sour cream, salsa and taco seasoning in this.

At least this would look different from the first recipe since you mix everything together. I think I would still add a little bit of the taco seasoning. Great find, New Day! Thanks.

I love foil pack dinners! They are so easy. I may have to make this after I go to the store since I am out of potatoes. Saved though.

Hi, try this. cheers. Mediterranean Fajitas 1lb/450g Chicken Breast or Minute Steak - shredded 1 Onion - chopped ½ Green Pepper - chopped ½ Red Pepper - chopped Handful of fresh Coriander - torn 2tbsp Extra Virgin Olive Oil 12 Flour Tortillas 125g carton Sour Cream MARINADE 4 cloves Garlic - finely chopped 6tbsp Red Wine; 3tbsp Worcestershire Sauce 1tsp dried Oregano ½tsp ground Cumin ½tsp Sugar 150ml fresh Lime Juice Optional - 75ml/5tbsp Tequila Mix all marinade together, add meat, cover and marinade in fridge min 1 to 2 hours or overnight if possible; Heat the oil in a large frying pan, add the onions and sauté on med/low heat for 5 minutes or so or until soft but not coloured; Add peppers, most of the coriander, meat and as much marinade you wish; Sauté until ready, about 5 to 8 minutes; Serve in dish garnished with rest of coriander, accompanied by hot tortilla wraps and sour cream

...or this? You could make your own waffles and use your dip in place of the sauce.

how about "Paula's Mexican chicken pie"-- baked & shred schicken- mix with dip-/cheese if you have it- place in baking dish- top with cornbread mixture(thinly) bake--

you could toss in whatever you have- onion- bells- green chilis- toms- corn?? keep up the good work- you have MY freezer almost clean-lol

You know, nanny, this is possible! I have some canned green chilies and some whole kernel corn in the freezer. And this southern girl always has the fixins' for cornbread! A great idea from another Memphis girl! Thanks!

your cornbread recipe is what i grew up with- you are the only other person in the world(except family) that knows what cornbread is-- but my family cut our cb different than anyone i have ever seen-- not like a pie or cake-- like cornbread-lol- once down the middle turn 45 degrees- then once in the middle and twice on each side-- ya get 4 "corners" to fight over
