Tofu Lasagna

Tofu is combined with eggs, spaghetti sauce, mozzarella cheese and spices. The mixture is layered with lasagna noodles and topped with more cheese.

Good morning! I thought my sister and I had plans for this evening, but she's cancelled. I made two small versions of this this morning, so I may try one of them tonight. I used the Barilla pre-cooked lasagna that are half-sized because they'll fit in the smaller pyrex dishes I used. Also used a can of Hunts meat sauce, as I needed to use it. The sauce was more than double but I had to add a little water to have enough, and I used twice the cheese. Next time I'll use my usual lasagna recipe and just crumble the tofu and treat it like the meat, I think.

This recipe makes a huge batch of lightly-sweetened wheat rolls. Because the dough keeps in the refrigerator up to a week, you can just use what you need every night for absolutely fresh-baked dinner rolls.

These, poor Hubby is still sick with that very nasty flu that is going around, second week now, took him to the clinic yesterday.. poor boy!
