Trying to cook at home more often but sometimes due to work it is hard. What are some of your favorite main meals to prepare then freeze and cook later and ones that you can completely cook but section out and vaccuum pack for individual servings for the freezer. I have so far done meatloaf and enchilada casserole. Any suggestions would be greatly appreciated.TIA

I've really made an effort this year to freeze what we don't eat up. I made a huge batch of Gumbo and froze it individually for lunches. Today I put the leftovers of a big pot of Chicken Taco Lentil soup in the freezer. I have black eyed peas in there and spaghetti sauce. Most anything will freeze well.

I freeze this sauce once it has had a day for the flavours to "marry" in ice cube trays. Five standard cubes defrosted is enough sauce for a whole batch of Jay's dough.

Nanny we do this as well. But we work completely opposite schedules and not even one day off together so it makes it tough sometimes. We are working on it though! Thanks
