I've been wanting to try this. What method of cooking where you thinking? Normally I'd just make fajitas and grill them.

This sounds good. Any method sounds good, just as it not the slow cooker.

Hi,try this. cheers. Mediterranean Baked Chicken Breasts Chicken breast(s) Extra Virgin Olive Oil Salt and freshly ground Black Pepper Optional: Can scatter fresh herbs or mixture of herbs over the meat (Oregano, Marjoram, Rosemary, Thyme, Parsley, Basil etc); Preheat oven to 190c/380f/Gas 5; Oil a foil lined baking tray; If using: Sprinkle herbs over the meat; Oil, salt and pepper the meat; Bake for some 10 to 15 minutes or more depending size until just cooked through and the juices are running freely and clear. Check with fork as you wish and turn once during cooking; At most, a touch, and I mean a touch, of brown colour in the juices;

Greek Style Chicken Pittas 2tbsp Extra Virgin Olive Oil 1 clove Garlic - crushed 4 Chicken Breasts - skinless and boneless 3 large Tomatoes - roughly chopped 1 Cos Lettuce - chopped ½ Cucumber - roughly chopped 1 Lemon - juice only 300g/10oz Greek or Greek Style Yoghurt 1tsp dried Mint 3 to 4tbsp to taste fresh Mint - chopped Salt and freshly ground Black Pepper 6 Pitta Breads Preparation In a large bowl, mix the yoghurt with the crushed garlic, half the fresh mint, half the dried mint, half the lemon juice and season to taste with salt and pepper; Set aside half the mixture in a small bowl; With the other half, thoroughly coat the chicken breasts; Place them in a sealed container and marinade in fridge for a minimum of 2 hours - longer if possible. Method Preheat a grill/griddle pan or barbeque; Add the chicken and cook for some 7 to 8 minutes or so on each side or until fully cooked through with the juices running clear and the breasts starting to char at the edges; Transfer to a plate, cover with foil and leave to rest for some 5 minutes or so; Slice the breasts into edible slices and arrange on a serving platter; To make the salad, in a large bowl, combine the lettuce, tomato and cucumber with the remaining fresh mint, dried mint and lemon juice; Add the olive oil and thoroughly toss everything together; Warm the pitta breads under the grill or whatever and cut in half; Serve with the chicken, salad and remaining minted yoghurt dressing.

Mediterranean Fajitas 1lb/450g Chicken Breast or Minute Steak - shredded 1 Onion - chopped ½ Green Pepper - chopped ½ Red Pepper - chopped Handful of fresh Coriander - torn 2tbsp Extra Virgin Olive Oil 12 Flour Tortillas 125g carton Sour Cream MARINADE 4 cloves Garlic - finely chopped 6tbsp Red Wine; 3tbsp Worcestershire Sauce 1tsp dried Oregano ½tsp ground Cumin ½tsp Sugar 150ml fresh Lime Juice Optional - 75ml/5tbsp Tequila Mix all marinade together, add meat, cover and marinade in fridge min 1 to 2 hours or overnight if possible; Heat the oil in a large frying pan, add the onions and sauté on med/low heat for 5 minutes or so or until soft but not coloured; Add peppers, most of the coriander, meat and as much marinade you wish; Sauté until ready, about 5 to 8 minutes; Serve in dish garnished with rest of coriander, accompanied by hot tortilla wraps and sour cream
