http://www.cheekykitchen.com/2011/04/tres-leches-cake.html This one. It was a little work, especially making two of them, but they look fabulous and I can't wait for tomorrow to taste them! I wanted authentic since they are Mexican and it's her favorite cake - I hope this is it!

I had to use regular vanilla, but I intend to get some Mexican vanilla as her husband told me last night that it is way better than regular.

Thanks, Manella! As I got ready to make the cake, I realized there would be at least 10 of us, possibly 11. One cake was not going to be enough! Plus I want her to be able to take some home with her, too.

Mexican vanilla is actually an imitation vanilla. There was also an article last year telling people that Mexican vanilla contained an ingredient that isn't good for you. I stopped using it after reading the article. Now only use pure vanilla for my baking.

SweetTreats, I'll have to look into that. I only ever use pure vanilla now and I'd hate to change over to something that isn't pure!

OK, I did a quick little search and see that yes, there is imitation Mexican vanilla, just like imitation regular vanilla and it may contain coumarin, which some studies have shown to cause liver/kidney damage. There is Pure Mexican Vanilla and it would be safe. Also very expensive. One just has to be sure that they are buying PURE Mexican vanilla.
