Has anyone slowed cooked chuck roast like you would a beef brisket (at 250 degrees for x number of hours)?

I put chuck roast in the crock pot with onion soup mix and a little red wine all the time, cook all day. Yummy. good gravy. You could herb and spice to taste but I highly recommend some wine, it really flavors gravy well.

I usually use the crock pot, but since I'm getting late start, I went ahead and put it in the oven. I used red wine, italian dressing, a can of diced tomatoes, garlic, lime juice, and onions in the pan.

I have slow cooked using the oven method and it took between 3-4 hours until the internal temp got to 145, depending on how thick your roast is.
