Thanks to those that had suggestions yesterday when I was substituting gingersnap cookies for the oatmeal topping on an apple crisp dessert. It was perhaps one of the best apple crisps I've ever had. I went ahead made my own gingersnaps (store is 10 miles away) and made some on the soft side for eating, and some on the harder side for the topping. I put the cookies in a chopper/processor with some brown sugar and then spread on top. Excellent results. I definitely will be doing this again. Thanks again.

Thanks for sharing the results and glad it was such a success. One of my favorite times for baking is when I'm making do w/ what's in front of me.

Full disclosure emeralds, I didn't have any oatmeal either. However, in my defense, I didn't even bother to look until after I had the dough made for the gingersnaps.
