I'd like to fix a special entree, tournedos rossini but don't have access to either foie gras or black truffles. I'm looking for suggestions of substitutions for these savory items. Thanks!

I'd use a good pate for the foie gras; can you find truffle oil? Or maybe use rehydrated porcinis for their strong flavor.
