Has anyone ever made the "Delicious Ham and Potato Soup" and froze it? I'd like to make a double batch and freeze some for a friend who is about a week out from having a baby. Thanks!

A hearty, easy soup that's ready in 45 minutes. Perfect for using up leftover ham.

I have, and I also used mashed potatoes to help thicken instead of as directed. I thought it worked well. I know everyone is different on potatoes though :)

Not sure exactly what .... but this did not freeze well for me either. I don't have much luck when freezing anything that has potatoes in it.

Hi, both milk and potatoes change texture when frozen. Taste remains but end result can be potastoes mush and meal watery. Have to defrost gently. Linda right re potatoes, when defrost totally lose shape therefore, mash before and probably less water. can defrost, mash all and reheat gently to get rid of extra water. hope helps. cheers.

Thats kinda what I was thinking. That the potatoes would maybe turn to mush. Thanks guys! I will go with plan B.

Potatoes don't freeze well for me. As Don said, taste is fine but the texture is strange. If I freeze a soup with potatoes, I cut them into smaller cubes instead of chunks. A bean soup, or minestrone (sans pasta), might be an option.
