My daughter and I will be taking a trip in a couple of months and I would like to make some freezer meals for my husband to eat while I am gone. My plan is to cook extra portions when I am cooking dinner and freezer them. This way he can just microwave them and not have to cook.I would like some ideas for meals that will freeze well. I need ideas for main courses as well as side dishes. I need fairly healthy foods, not loaded in fat and fairly low carb. We live in the south so good ole southern dishes are what I am looking for. I do try to make them healthier than my Grandma did :0). I am not looking for recipes but just menu items that will freeze well after being cooked.Thanks

I am not looking for recipes. Just items that will freeze well after they are cooked such as meatloaf. I have recipes for the things I cook. I just need to know what freezes well.Thanks

Lasagna, chili, enchiladas, soups all freeze well

stuffed shells, cabbage rolls, shredded meat/sloppy joe mix for sandwiches, meatballs in sauce, wings (I'd reheat in the oven or grill though), egg casseroles, biscuits and gravy

My husband loves to cook - some things he loves - I do not. What he does is makes LARGE amounts - freezes in plastic containers the size for sandwiches. He does chicken alfredo,jambalaya, and his favorite - really HOT chili - ala cayenne peppers. I do things like pot roast, various casseroles and freeze them. One time at the farmers market a load of tomatoes were cheap. I made a massive amount of salsa – froze lots of it – and it froze very well. I do that now with gazpacho. Of course today Ragu and others make better spaghetti sauce than I can from scratch. There are various lasagnas also that freeze up well. There are many variations on lasagna using vegetables, eggplant is a surprising switch from using pasta just a few suggestions we do in our home. I roll out pasta from scratch a lot using oat flour (oatmeal in a blender) and whole wheat. It is a tougher noodle to roll out - but a higher nutrition and they freeze in dishes and soups very well.

Things that do not freeze well: Battered and fried foods, Cooked egg whites and yolks, as well as icings made with egg whites, Cottage and ricotta cheeses, Custard and cream pies or desserts with cream fillings, Mayonnaise, Soups and stews made with potatoes, which can darken and become mushy when frozen, Soups and stews thickened with cornstarch or flour, celery.
