I like this one,i used goat cheese instead of the feta(to salty),i also used fresh spinach,wilted down in a pot with little onion and garlic.Very good.

Golden-brown pieces of chicken breast are served in a light lemon and white wine sauce in this easy, quick main dish that's pretty enough for company.

Hi, try these. cheers. Mediterranean Baked Chicken Breasts 4 Bone in/Boneless Pork Chops Extra Virgin Olive Oil Salt and freshly ground Black Pepper Optional: Can scatter fresh herbs or mixture of herbs over the meat (Oregano, Marjoram, Rosemary, Thyme, Parsley, Basil etc); Preheat oven to 190c/380f/Gas 5; Oil a foil lined baking tray; If using: Sprinkle herbs over the meat; Oil, salt and pepper the meat; Bake for some 10 to 15 minutes or more depending size until just cooked through and the juices are running freely and clear. Check with fork as you wish and turn once during cooking; At most, a touch, and I mean a touch, of brown colour in the juices;

Mediterranean Fajitas 1lb/450g Chicken Breast or Minute Steak - shredded 1 Onion - chopped ½ Green Pepper - chopped ½ Red Pepper - chopped Handful of fresh Coriander - torn 2tbsp Extra Virgin Olive Oil 12 Flour Tortillas 125g carton Sour Cream MARINADE 4 cloves Garlic - finely chopped 6tbsp Red Wine; 3tbsp Worcestershire Sauce 1tsp dried Oregano ½tsp ground Cumin ½tsp Sugar 150ml fresh Lime Juice Optional - 75ml/5tbsp Tequila Mix all marinade together, add meat, cover and marinade in fridge min 1 to 2 hours or overnight if possible; Heat the oil in a large frying pan, add the onions and sauté on med/low heat for 5 minutes or so or until soft but not coloured; Add peppers, most of the coriander, meat and as much marinade you wish; Sauté until ready, about 5 to 8 minutes; Serve in dish garnished with rest of coriander, accompanied by hot tortilla wraps and sour cream

Sumac Chicken with Tomato and Mint Salad Serves 2 3tbsp Extra Virgin Olive Oil 4 thin BLSL Chicken Breast Escalopes 3½tsp Sumac + extra To Serve - set aside ½tsp ground Cumin ½tsp ground Coriander 2tbsp White Wine Vinegar 250g/½lb mixed Tomatoes - plum/vine/cherry - chopped 6 small Radishes - trimmed & thinly sliced Handful fresh Mint Leaves - shredded ¼ Cucumber - finely sliced and cubed 1tbsp flat leaf Parsley - chopped Salt and freshly ground Black Pepper In a bowl mix 2tsp Sumac, Cumin, Coriander, 2tbsp Oil with Salt and Pepper to taste to create a paste; Rub all over and coat Chicken and set aside; In a large bowl, mix the remaining Sumac, Oil and the Vinegar together and season with Salt and Pepper to tatse; Add the Tomatoes, Radishes, Cucumber and Parsley and toss vigorously together to ensure everything is well coated; Scatter over the Mint Leaves; Grill or Griddle Cook the Chicken for 1 or 2 minutes on each side or until cooked through with the juices flowing clearly and freely; Serve with crushed new potatoes with butter and the Salad over which sprinkle with a little extra Sumac.

This is a one pan meal that's in the oven in 15 minutes. Rosemary, garlic, and oregano create a mouth watering aroma and the potatoes are crispy like french fries. Kids just love this!

I use chicken breasts in this. I marinade them in Yashidas. We love the flavor the chicken gives the fries. They really do get crispy!

I use this method with breasts that I pound out, I omit the salt and add poultry seasoning, I only bake for 30 minutes, great with mashed potatoes.
