Hi! Need some ideas for a good Mexican meal. Not enchiladas, tacos, chile verde, or burritos! Thinking along the lines of a good beef or chicken main dish that would pair well with spanish rice and beans. Would love any suggestions you might have! Thanks:D

Don't know if you have access to a grillor skewers, but these are very good. Use any veg, onions, etc. you might have on hand or just skewer the chicken.

I do have access to skewers:) However, no grill. I guess I could try pan frying them....Marinade sounds yum, though, no matter how the chicken is cooked!

you could evn "scramble " them- no skewers- yum- these sound great- saveur has the best ideas

Good idea, nanny, just stir-fry everything together. With the chicken cut into small bites, the marinade flavors will have a chance to really be flavorful!

Brings back memories! The mom of one of my friends would always send an extra piece of tamale pie with her daughter whenever she had it for lunch at school. I need to try this soon! We don't have access to cornbread mix, could I just use any cornbread recipe?

Mexican Shepherd's Pie

This is a Mexican version of the Shepherd's Pie that is so popular in the UK. I decided to try this one night when I did not have any mashed potatoes. Its cheap, quick and easy...and my kids loved it! Serve with a tossed green salad for a great family meal!

Or this. I just browned beef and onions, used my taco seasoning mix, some salsa. Put in pan, spread made up corn muffin mix on top and baked. You could add in peppers, beans, corn, whatever.

Carne Guisada Ingredients · •2 pounds round steak, cut into bite size pieces · •1 tablespoon garlic powder · •1 teaspoon ground cumin · •salt and pepper to taste · •2 tablespoons olive oil · •2 tbsp all-purpose flour · •2 cups water · •1 onion, sliced · •1 8 oz can tomato sauce Season the meat with the garlic powder, cumin and salt and pepper to taste. Heat the oil in a large skillet over medium high heat. Add the meat and sauté for 5 to 10 minutes, or until browned on all sides. Add the flour, stirring well, and sauté for 1 more minute. Add tomato sauce then gradually add the water, making sure to crush any flour lumps. Then add the onion and reduce heat to low and simmer for 35-40 minutes with the lid on. Season with salt and pepper to taste.
