I have a lot of ground beef taco meat left over, but do not want tacos. Any ideas on what else I can do with taco meat?

Mexican lasagna?? We used to make grilled cheese w/taco meat....we use texas/thick toast, taco meat, & cheddar or cheddar jack cheese grilled just like a grilled cheese sandwich, & dip in a ranch/salsa mix. Love those!

That sounds delicious! (grilled cheese) I grew up in Alaska where I was raised on caribou meat and salmon....and now I feel cheated out of taco grilled cheeses!! haha, thanks Lisa

These are easy and delicious! Use them as an appetizer, or as a main dish. As an appetizer, serve with salsa. As a main dish, serve on a bed of lettuce with all the taco fixin's you love.

A wonderful picnic, potluck or 3-day dinner. Quick and easy and everyone seems to love it. Optional toppings include chopped tomatoes and olives. I love to have this heated a bit the next day or two!!!

Yeah, I was expecting company but we went out instead, so I had to make the meat. Now I'm left with a huge bowl of it...if you were my neighbor I'd share:) Thanks again.

I use mine on a salad made with romaine lettuce, tomatoes, mushroom, green onion, throw warm taco meat over salad with sour cream... in our house we call it taco salad, I make more taco meat purpusely to have leftovers for this salad...

since youe meat is already cooked- what you don't use today- just ziploc & freeze- i may come in handy one evening:-)

Yup, I'll have to freeze some. Cant sit here and pig out on all of it myself...hmmm...or can I now that I have all these fantastic recipes??

when i make mexican- i always make extra and make up a version of this & freeze- i just thaw in the fridge for a day & reheat:-) i love getting a day off sometimes

Flatten out some biscuits dough, top with cheese, fold over and bake to make mini empanadas. Same can be done with crescent dough. Just cut each triangle in half.

These are good. Add veggies and you have a quick meal. What I usually do with left over Taco meat is freeze it for a later meal. Makes for a quick meal next time you plan tacos.
