Tina's Halloween Quesadillas

Before you send your little ghouls out the door on Halloween, feed them a warm supper of orange-colored tomato tortilla quesadillas, filled with Cheddar cheese, sweet potatoes, and black beans. You can cook the sweet potatoes in a microwave oven ahead of time.

I baked a couple sweet potatoes last night - and then peeled and mashed them, and will probably use them for this recipe tonight. I had just eaten, so I saved the peelings in a sandwich bag, which I brought to work. When I was ready to eat, I warmed them [the baked sweet potato peels] up and lightly buttered them before eating. They are so good! But, is that crazy [in a good way, of course (=]?

I do love sweet potatoes and have not eaten the skin. I do like the skin on baking potatoes, so, really this won't be much different.

A few weeks ago,my wife ate the skin from a baked sweet potato. Until then, it never crossed my mind that they could be part of a meal. I always fed them to the worms because they just didn't appear appetizing. Maybe you and she have opened up a new culinary experience for the world to partake?

This is a new one on me. I haven't tried them. I might the next time I make baked sweet potatoes though?

Unless I peel them raw,which is rare, I always eat the skin.

I was peeling and boiling for mashed - but love the baking, and peeling for mashed now. Especially because the skin is so tasty! Why waste it by peeling it off raw?!

Although i have never eaten the skin, idon't see why it's a problem. People eat potato skins in mashed potatoes, roasted potatoes, baked potatoes etc...It makes sense.

I took half of a baked one to work once and ate it out of the skin with a fork and then at the skin separately. That might be strange too :)

Linda, that's how I eat a regular baked potato - many time's saving the skin for later, and doctoring it up when it's time to eat it (=

The skins are loaded with nutrients! I grew up eating them and was surprised when I found others don't. Of course they are much better if the tater isn't wrapped for baking so it gets crispy.
