I made some peanut butter and amaranth cookies a few days ago and I now have them in the fridge to keep them fresh. I have noticed that they are a very soft cookie with the added amaranth to the dough. If I added some brown sugar to the recipe would that make them a little bit crisper to have a little bit of added crunch to them.

In my opinion, they wouldn't be any firmer. Brown sugar has a lot of molasses in it. It is used to make chewier cookies. I hope this helps. :)

White sugar, butter and egg yolks will all help make a cookie crisper. Brown sugar will make the cookie softer.
