Good morning! It's supposed to get to (almost) 60* here today....in Michigan....in January. CRAZY! I woke up to a thunderstorm. Unbelievable. I feel obligated to grill tonight so we'll have these w/fruit(cantaloupe, blackberries, & kiwi) & chips. Have a great day everyone!

The only bad thing about working graveyard this month has been my sleep )= It was not a problem the 20 years I did it before - but this month, my sleep has been so poor )= I am not looking forward to working swing shift next month - at all! But my sleep should be a LOT better (=

If you guys are all going to be so warm, we are probably going to be freezing!!! We seem to be teeter tottering with the rest of the country, weather-wise. We're warm when everyone else is chilly, and vice versa, the last few weeks . . .

I'm sure I will have leftovers of this. See my review - or my post, one below. This comes out very watery. Tomatoes need to be drained, or something . . . Very simple, and very tasty, though. The guys at work LOVED it!

Oh, man! I bought a whole wheat loaf to go with the lasagna - just now smacking my forehead! I should have made the Hasselback rolls! Maybe today to go with the leftovers - though that would entail another trip to the market )=

Heather said yesterday, and in her review, that was soggy. I thought the noodles were over cooked. I think that I now know what she meant (= But, she put it down to meathod, and I don't think that's the problem - I think there is just way too much liquid in the recipe for the pasta to absorb . . .

I made crock pot lasagna once and it was the noodles we didn't like, they were rubbery. I guess everybody does like the Swiss chard in it though?

AHHHHHHHHHHH I didnt drain the tomatoes either!!!! Maybe I will give it another go? Barb you said you made it in the crock before and it wasnt as soggy/watery right? hmpf! AND we liked the swiss chard also! Def cannot wait till our local farmers market opens in April...I know I saw it there!

No - I hadn't made it in the crock before. What I was saying is that any time I cook in the crockpot, I automatically start it on high for an hour before changing it to low. The directions do not say to drain the tomatoes - but I really think that's where the problem lies with this recipe . . . PLUS, the tomatoes, themselves, AND the chard will give off their own liquid while cooking . . .

Thanks for all those tips. I've never made lasagna in the crock, and I'm a fan of swiss chard. My mom grows it in her garden, so this will be added to my box :)

Hi, sunny Tuesday. cheers. Asparagus Soup 2tbsp Extra Virgin Olive Oil 450g/1lb Asparagus Spears - Stalks only - prepared and roughly chopped 2 Shallots - chopped 2 rashers (slices) Pancetta (or unsmoked Streaky Bacon) - chopped 450ml Chicken Stock 60g/2oz Crème Fraiche (or Single Cream {Half & Half}) Salt and freshly ground Black Pepper Asparagus Tips - for garnish Water- for cooking Asparagus Tips Heat the oil in a medium to large Saucepan; Add Pancetta and sauté for 1 minute; Add shallots and sauté for further 2 minutes; Add Asparagus stalks and sauté for a further minute; Add chicken stock, bring to boil and simmer for 5 minutes or until the asparagus is just tender; While stalks and chicken stock simmer, in a separate small pan, bring water to boil, add asparagus tips and parboil for 1 to 1½ minutes; Drain and set aside; Meantime, remove stalk mixture from the heat and “blitz” with blender until smooth; Return to heat, add crème fraiche, stirring until well combined; Season with salt and pepper to taste and simmer for a further minute; Ladle the soup into individual bowls, garnish with asparagus tips and serve immediately with fresh crusty bread.

Pizza Style Cheese on Toast Serves 2 1 Tomato - finely chopped ½ Onion - finely chopped 120g/4oz Cheddar/Parmesan Cheese mix - grated Pinch Ground Cumin Small Piece (knob) Butter 1 to 2tbsp fresh Coriander or medley of herbs (Oregano/Basil/Parsley) - finely chopped Pinch Chilli Powder 2 slices Ciabatta/Chapata Bread Mix all ingredients together in a bowl; Toast bread on both sides; Spread cheese mixture on toasted slices, making sure toast is completely covered; Place under grill until cheese bubbles and browns slightly;

In the oven now. Forgot to say, I had to use red wine vinegar because I didn't have the rice wine vinegar. Hoping it doesn't make for a huge change in flavor.

Good morning! Leftover ribeye or KC strip steak-DH grilled several extra-with brown rice pilaf (also leftover). I'll add a vegetable in there, somewhere. It was 72F yesterday, but is only supposed to be in the 40's today. I have a class at work this morning, but am free this afternoon, so have at least a half-day to enjoy the outdoors. I'll probably take a nap.

Good morning. Off to start another super long day. Yesterday didn't get home till 8pm (left at 7am). Dinner was at 8:30pm and I was super grumpy. I get very irritable when I don't eat regularly. Off to hospital again after work. Grandma doesn't want to be alone. Wanted me to stay the night. Broke my heart. (and she's confused to boot). Tonight I am hoping my 13 year old will put a marinated pork tenderloin (lemon and garlic) in the oven so when I get home all I have to do is the sides. Tired already and it's only 6:30am!!!

My kids call that "hangry" - when you get angry easily because you're hungry (= Lindsay, I understand how hard this is with Grandma! I went through this with Mom a few years ago. She was in the hospital for 10 months, total. I was working graveyard, raising three kids, and going through my divorce. Not sure how I did it now! Just remember that it's only a season (=
