Easy Slow Cooker Lasagna

This slow cooker lasagna recipe uses layers of noodles, Swiss chard, and mozzarella cheese with mixtures of seasoned tomatoes and ricotta cheese for an simple way to prepare an American classic.

Here's my review: Made this 1/28/13 for Recipe Group. Made it as written, with a couple slight changes. I cooked it for 1 hour on high, then 2 more hours on low. I was also excited to find whole wheat lasagna noodles. As I was layering, I ended with noodles and topped those with mozzarella - then had second thoughts and used a 14 oz can of diced tomatoes that I had on hand to top the noodles before adding the last of the cheese. I brought this to work, and the boys LOVED it! Ben said he couldn't believe he was eating vegetables - lol! - [in reference to the Swiss chard]. Chris asked if there was enough for seconds (= I did think about draining the tomatoes, but I thought the noodles needed the extra liquid. Apparently not. My only complaint about this was that it was very soupy )= Not sure how I will try to fix this next time. Maybe drain one of the cans of tomatoes. Or maybe use tomato sauce in place of one of the cans of tomatoes. I'm sure I will make it again, but I will try to thicken the sauce somehow next time. Five stars for flavor and method. Three stars for the watery sauce.

I'm going to have to play around with this. Your piziolo sounds good - but is quite a bit less. Maybe 1 28 oz can, 1-14 oz can, and an 8 oz tomato paste . . . And I may drain the tomatoes. Just not sure (= I'll need to have a couple coins on hand when I make it next (=

Thanks for the review Gammaray. When I first saw this recipe my first thought was "soggy". I never would slow cook lasagna. Bet the noodles didn't get dry! When I bake lasagna the edge of the noodles sticks out and gets dry and hard. I need a bigger dish!

The noodles were not a problem for me - and no one else complained about them, either. No one complained about how wet the dish was either, though (=

Glad they enjoyed it. I do not have a lasagna pan. I use my casserole dish. That's why the noodles gets dry on the ends. I try to tuck them down. lol!

gammaray, I've wondered about crock pot lasagna, will follow your lead and experiment! What do you think about using rice noodles? Sorry to hear you've had a rough time, be kind to yourself (my words to myself recently).

I hear you on the sleep-deprivation. The worst is when you simply can't fall asleep and it's not stress etc. Curious to hear what sleep specialist will say tomorrow.
