Glaze them with butter and brown sugar.

I saw this on Pintrest today and thought it looked really good and liked that it wasn't your "typical carrots." Might be worth a try!

It's funny you ask this, because I just finished grilling some carrots a half hour ago. Browning the outside with some oil on high heat makes them quite delicious. The outside becomes caramelized. Cook it until they start to wrinkle and shrink and the outside begins to brown.

I like to cook my carrots with a little butter and a spoonfull of apricot preserves. Yum!
