I'm making individual chicken pot pies for a friend whose husband has been hospitalized since New Year's Day. I am also making a salad, but I'm torn between a plain old undressed garden salad, and something different. She has three boys, ages 12 and 16 also. A lot of others have donated meals, and many have done pasta and salad. Any suggestions that would go well with chicken pot pie (and lemon bars for dessert)? TIA

Hi Pam! Chicken pot pie is comfort food at it's best and substantial enough for teenage boys. I would pair them up with a marinated tomato, cuke and red onion salad. Thanks for being a good friend to your friends in need! I had a similar situation with a terminally ill friend's family and they too got tired of red sauce pasta dishes and enchiladas but certainly apprecaited all the help and support.

I have a great salad that is always a big hit especially with my homemade pot pie. I start with romaime lettuce, julianne carrots, about a half a cup of cilantro chopped, and if you like tomatoes and cucumbers you can add that as well. I finish with zesting a full lime and juice the full limeon to the salad directly, mix and dress with balsamic vinegarette and croutons. enjoy!!

My kids love corn on the cob and green beans. Both would go well with pot pie! Yum.

this salad is fabulous! People always ask me for the recipe. The dressing is amazing and lasts about 2 weeks in the frig (I keep it in a glass ball jar). enjoy!
