I have chicken, corn bread mix, tortillas, canned toms (mexican style), corn, sour cream, chilies, beans, half of a red bell pepper ummmm I don't have any cheese but was going to get some anyways. I am NOT looking for anything soup or chili like but more casserole. Something that I can throw together and put in the oven. Something that doesn't take to long either cause we have to be in bed early since we have to be up at 2:30am! TIA EVERYONE!!! catch up with you all soon!!!

Mexican Shepherd's Pie

This is a Mexican version of the Shepherd's Pie that is so popular in the UK. I decided to try this one night when I did not have any mashed potatoes. Its cheap, quick and easy...and my kids loved it! Serve with a tossed green salad for a great family meal!

Sub in the chicken for the beef(cooked already yes?)

Or, cook the chicken with taco seasoning, add in the corn, toms, beans, etc. Top with the muffin mix, and serve with sour cream and cheese on top while hot. (I did it that way with ground beef, did not follow the recipe at all :)

Mexican Lasagna

My whole family loves this beefy lasagna flavored with taco seasoning. Even my picky five-year-old will eat it. Serve with shredded lettuce, fresh sliced tomatoes, olives and sour cream.

we've done a lasagna similar to this. lightly butter corn tortillas and layer with shredded (cooked) chicken and tomatoes/ taco sauce/ salsa (whatever we have at time) can add layer of beans, onions, etc. and top with cheeses. bake 350 for about 30 min til bubbly. we make in 9 inch round cake pans so tortillas fit in flat, but can make one with beans and one with veggies to cater to tastes.

i love this- i don't use pie crust- i just crunch up chips( fritos/tortilla) and put in the pan first:-)
