This is the way to get crisp bacon without having to constantly turn it, watch over it, or get burnt by splatters of grease. It 'fries' up flat and doesn't curl, which looks great beside a breakfast plate of eggs, and makes BLT sandwiches much easier. Very nice when feeding a family or crowd.

Sounds good Chiristina. I usually do breakfast on Sat. nights. Fri are children choice which is pizza or pasta, Sat is breakfast and Sun(recently made this choice) is appetizers!

Mi, I do not like them sweet! I like them in savory dishes , or as fries. I boil them in beef broth and mash them for the addictive sweet potato burritos, then eat the leftovers on toast, sprinkled with feta -yum!

Sumac Chicken with Tomato and Mint Salad Serves 2 3tbsp Extra Virgin Olive Oil 4 thin BLSL Chicken Breast Escalopes 3½tsp Sumac + extra To Serve - set aside ½tsp ground Cumin ½tsp ground Coriander 2tbsp White Wine Vinegar 250g/½lb mixed Tomatoes - plum/vine/cherry - chopped 6 small Radishes - trimmed & thinly sliced Handful fresh Mint Leaves - shredded ¼ Cucumber - finely sliced and cubed 1tbsp flat leaf Parsley - chopped Salt and freshly ground Black Pepper In a bowl mix 2tsp Sumac, Cumin, Coriander, 2tbsp Oil with Salt and Pepper to taste to create a paste; Rub all over and coat Chicken and set aside; In a large bowl, mix the remaining Sumac, Oil and the Vinegar together and season with Salt and Pepper to tatse; Add the Tomatoes, Radishes, Cucumber and Parsley and toss vigorously together to ensure everything is well coated; Scatter over the Mint Leaves; Grill or Griddle Cook the Chicken for 1 or 2 minutes on each side or until cooked through with the juices flowing clearly and freely; Serve with crushed new potatoes with butter and the Salad over which sprinkle with a little extra Sumac.

Good morning! I got caught up organizing soup recipes to a folder :) I'm going to use leftover cheesy cauliflower to make soup. It's an experiment so hopefully it'll work. Also using leftover ham for sammies to go w/it. No school again for us today. Yay! DD woke up w/a headache again so I'm glad she now has a long weekend to heal(tomorrow is already a scheduled day off). Both boy's have ortho appt's & I'll probably be taking my daughter back to the dr, so lots of running. WHY can't I have a pj day?? :)

Yes, I'm not sure if it's the temps or the snow. When I came home lastnight from conferences, the roads were a mess & the snow was still coming down like crazy. We're supposed to get hit w/a major snowstorm tonight into tomorrow also but tomorrow is a scheduled day off(always a day off during conference week's). It's cold old....I don't wanna go anywhere...whine, whine, whine. Hubby's been in Indianapolis the past couple days & I have to meet him at the car rental place after work, too. No one will leave me alone today :/

Hey there Savvy! Haven't made this one in a while. Thanks for suggesting it yesterday! And I have served it over sauteed spinach instead of rice or pasta. Just may have to do that again! Another good idea! Happy Thursday!
