I want to pre-cook a package of boneless chicken thighs to use in a Chinese salad. I have about two pounds worth. How long would you boil these?

And if I decided to marinate them and cook them for use instead, how long would I cook them and at what temp? Chicken is still not one of my best skills.

I wouldn't boil them. To me, boiled chicken is tasteless and often tough. (But that's just me.) I would bake them at 375F for about 35-45 min. You might want to rub them lightly with EVO if they are skinless and sprinkle with poultry seasoning.

I made an Asian dressing so I think I'm going to marinate them in that, then bake them as you mentioned. Then let them cool before shredding them up for the salad.

There are two ways to do chicken for Chinese food. If the sauce is translucent or if the dish is light (NOT like General Tso's chicken) then boiling is preferred. Dark sauces or rich dishes should be stir fried. Think about what you see at the buffet. Chicken and broccoli has boiled chicken in it. It's just cooked a little in the sauce to finish it off. Since you're doing a salad you'll want to be a little careful that the flavor of the chicken doesn't overpower the salad. Or you could just cook the chicken in a wok using the marinade and then remove the chicken to the salad.
