I have an amazing recipe for Antipasta that includes tuna. It makes a large amount and I have always heard that you cannot process it safely, and yet I've seen many recipes where they do it. I've tried to freeze it in jars but the texture changes. Is it safe to prepare and process it in a canner? Thanks so much.

Does it use fresh tuna? I would imagine that it could be processed using a method that is safe for fish and other proteins. After all, tuna is commercially canned all the time. But what else is in the recipe? Would other ingredients withstand the canning (heat) process?
