What exactly is focaccia bread? I looked for recipes for using the bread machine but the reviews are not great. Is there a different kind of bread that would be comparable? I have a few sandwich recipes that call for using that type of bread. I have never seen it before.

Ciabatta is similar. Where I buy them, often foccacia has herbs in it and the ciabatta is usually plain, but the actual bread texture is similar.

I made my own and I'm sure it's probably not "right" but it worked for us. I've never had it, so mine is holding up to lack of comparison haha. This was an interesting video I watched after the fact and has a few links for her different recipes... http://www.latimes.com/features/food/la-fo-masterclass-20110526,0,1188913.htmlstory

Good to 'see' you Alex. Are you getting back to cooking?

Hi Alex! Hi Linda! Thanks! I may just try making my own, we have no reference either, so it will be "perfect"!

Good luck! I started out using anne Burrell's recipe from foodnetwork, but I made some changes. It was so easy (that's why I'm skeptical that it's right). If you want to see how mine turned out I wrote it up but I'm not suggesting you try it or anything. NO yeast bread pros in this house :)

Focaccia is an Italian flatbread. You can use any yeast bread recipe dough, and just press it down really flat, usually with lots of dimples in it, and it usually has some kind of herbs or seasoning. We like rosemary and garlic. It's great for sandwiches. My husband is from a city about 40 minutes from Rome, and whenever we are in Rome, we always grab lunch at a "bar", which usually consists of focaccia bread with either Proscuitto or Mortadella inside. Very simple, yet very tasty.

A wonderful, quick alternative to garlic bread. Lots of herbs and lots of flavor!

I've used this recipe before. You roll or pat out the dough into a rectangle or oval or whatever flatish shape you want then add toppings and bake. So, it's a flat bread with spices and/or cheese and seasonings. Very good for sandwiches or paninis.
