Scotdog,i looked at it ,sounds good,maybe if you sprinkle some paprika on it,he won't think it's boiled.Would give it a nice rosy color.Hope this helps.

Hi again,also if you put it under the broiler for a minute or 2 might brown it up a bit.

just like poaching- gotta really pump up the flavors:-) i am with manella- paprika puts a new look to chicken

the recipe really sounds good- i would have to spice it up- maybe top with grilled onions?

I can see why he might think that. My sister also has a problem with "white" chicken. Perhaps you could spray a non-stick pan with cooking spray and brown on the top side only, then follow through with the rest of the steps. That would give it a little color, and I don't think it would affect the cooking time very much.

I would use lemon pepper instead of lime. Also agree that browning the chicken would be good. You definatly need to add more spices. I would also cook the rice in chicken broth. Any kind of veggie would be good too. Im not a fan of zucchini or red pepper so I would probably do squash and onions maybe even brocolli. Also add some garlic. Looks like a very healthy meal!
