Good morning all!! I bought two bags of mini differnt colored sweet peppers at Aldi's yesterday. I was thinking of stuffing them to put in the kids lunch boxes.....I have no cream cheese. Any ideas of what else to do with them? Thanks!

Hi,if your not going to use them in lunches,chop them up,put a little olive oil in a pot,satue onion,and garlic,add peppers,little water,not much as the peppers let out juice,salt and pepper to taste,let simmer about 45min.I make this alot it goes well with any kind of meat,or over toast.Hope this helps.

Hi, Try this --- Can use peppers of all colours. AN Italian classic. cheers. Peperonata 2tbsp Extra Virgin Olive Oil 2 Red Peppers - washed, cored, seeded and cut lengthways into thin strips 2 Yellow Peppers - washed, cored, seeded and cut lengthways into thin strips 1 clove Garlic - finely chopped 1 Onion - finely sliced 300g/10oz Tomato Passata 1tbsp flatleaf Parsley - chopped Some fresh Basil Leaves - torn Salt and freshly ground Black Pepper Pour and gently heat the oil in a big frying pan; Add onions and cook gently, stirring frequently for some 3 minutes or so until softened a bit; Add peppers and cook, stirring continually, for further 3 minutes; Stir in the garlic, passata and parsley, combine well and season to taste; Increase heat to bring to boil, stirring frequently; Reduce heat, cover and simmer for about 15 minutes; Remove lid and cook gently, stirring frequently, for further 10 minutes or so until the mixture has reduced and thickened; Stir in the torn basil leaves, taste for seasoning and serve. Note:- Can serve cold.

you can stuff them with some leftover chicken with melted cheese. ive been seeing these bags of colorfull peppers in the stores here in brooklyn. havent tried them yet. are they hot peppers?

No, they're sweet and yummy. Stir fry with onions and some kind of meat for a quick supper.

I bought them at the farmer's marke last summer, they are just too cute!

Quick & easy! Only 3 ingredients required: bacon, a block of Cheddar cheese and jalapeno peppers. The men in my family are crazy about these yummy treats. In fact, my husband often eats them as a meal!

i shop at aldi too. these peppers are great and versatile. i put them in bolognese sauce, stews, salsa.

if you are going to use them to cook with, like in a stew, you can dice and freeze them in ziploc bags with enough in each bag for individual recipes.
