Nandabear is looking for: (2 recommendations)
Does anyone know if Marsala or Sherry can be substituted and not compromise too much the outcome? I have Merlot, Malbec, Chianti and Carbenet Merlot. Or for that matter a sauce for Chicken/pasta that worked well for you? Thanks in advance!

The easiest way to get perfect Hollandaise is to use a blender. This recipe has all the same ingredients as the classic, but no double boiler and no chance of the sauce separating.

Nanabear - I would recommend this blender Hollandaise Sauce - it's easy to make and the acidity if derived from lemon juice - it's got a great taste and will go well with your lemon pasta dish

I'm kind of gathering from the wines you've listed that the recipe you're using calls for a white wine to make the sauce - - Marsala and Sherry are sweet wines and would not achieve the equivalent of the white wine sauce taste you're looking for. I would makes the Hollandaise or a lemon butter sauce of some kind - - that will complement the chicken dish you're making - hope this helps.

I'm making Garlic Chicken from this site and was toying with the idea of serving it with Fettuccine and maybe a sauce. I first thought of an Alfredo but then I was trying to find something lighter... maybe less calories too. I'm saving the above recipe though. It looks great. Thanks luv2cook.

Maybe play with this sauce? One reviewer used a can of dice toms. I think it would work fine with the garlic chicken.

Nandabear,you can always try just a little onion and garlic fry a bit in olive oil,toss your pasta in that to coat,add some parsley.Nice and light.
