This soup incorporates pre-baked cubes of potato with onion, crumbled bacon, cheddar cheese and sour cream in a milk soup base which has been thickened with a roux.

I fry them up in oil and butter with some diced onion. Or turn them into potaoto cakes and fry them up.

Hashbrowns!! Leftover baked potatoes make the best hashbrowns.

Take baked potatoes to the ultimate level of creamy, cheesy, buttery goodness. Then top with bacon. Mmm bacon!

Make a few double baked taters, freeze individually, wrap, throw in freezer bag. Bake from frozen at 375 for about 40-50 minutes (depending on the size of your taters).

I have sliced them thickly, fried til golden on each side in butter and oil, then let them sit on paper towel for a 60 secs or so. Top with a bit of salsa, add a dollop of sour cream and a few chives - lovely appetizers or served as a main with a side salad. Why I think I've just talked myself into baking potatoes tonight to do this tomorrow!

What I like to do is cut them up and put them on a cookie sheet, pour a little olive oil and sprinkle some rosemary. Then stick them in the oven until hot.
