I want to stuff the chicken with spinach and mayo mixture and leave out the fata.

Portabella Mushroom Burgers with Red Pepper Mayonnaise

Portobello mushroom caps are marinated in soy sauce and balsamic vinegar, then grilled and served on buns with a spicy-hot and colorful roasted red pepper mayonnaise with lots of cayenne. Serve with tomato, onion, and lettuce.

Marinade the mushrooms using this mixture and use the red pepper mayo to mix in with the spinach instead of plain. Too much???

all sounds good jess-i would chop the swiss and put it in place of feta:-)

Jess sounds good to me to,i replaced the feta with goat cheese,was quite tasty.

Manella Goat cheese would be good. I make spinach with goat cheese all of the time. It is so creamy! I dont think I have any though

Nanny that is a good idea but I dont think I have enough swiss to do that and top the chicken.
