This looks really interesting. My poor DIL orders sub sandwiches rolled in lettuce and burgers without the bun! I can vary the meat and cheese also for variety.

Hi ya irayd8...don't know how "fancy-smantzy" you want to go, but this salad is a stunner. Serve with a fruit bread or muffin. You can also play with the shellfish, add/omit as you like. Another seafood idea would be a seafood cob salad, sub the turkey/bacon for cold scallops and salad shrimp. I'm having shrimp tonight, can you tell I'm in a seafood mood???!!!

Oh My Gosh! This makes my mouth water...but around here lobster and crab are like GOLD. My Mom and I made a traditional Italian Christmas Eve fish soup that ended up costing almost $60 ( just the soup).

I love it! Sounds like the mini crab cake appy I took to my nephew's for Christmas Eve last year, about $50 bucks worth of crab...I was sweating bullets sauteeing those little suckers!

Hi, Irayd8 - It's not that hard to do a gluten free meal. There are lots of meals with just meat and vegetables. To top, if you want pasta corn pasta tastes very similar to flour pasta. You just have to cook it a little longer. Udi brand gluten free bread at Trader Joes is pretty good too. It is a little pricey though, the whole grain bread I like.

You could do any starch: corn, rice, beans, potatoes....assuming they don't have grain intolerance and it's just an intolerance to wheat. Allrecipes actually has some gluten free recipes, but I would check Trader Joes or Whole Foods for more options for subbing wheat. Trader Joes has a printable list of all products that don't contain wheat.

Thank you so much Baker Bee! We're new to this-DIL has been gluten free since October (for a thyroid problem and it seems to really help)

I thought this was a little too much as a dinner side but I think it would be a nice medium weight lunch or dinner. Maybe with a little meat tossed in if someone needs it.

You could always do a crustless quiche or fritatta, with a green salad or fruit salad.
