Hi ya peeps! Looking for an interesting rice to have with grilled shrimp on the barby. I'd like something with lots of veg, I have tons on hand, mushrooms, carrots, onions, zucchini and summer squash, tomatoes and fresh spinach. Anything come to mind? All ideas welcome and thank you!

I precook the carrots to a firm but not hard texture in the nuker. Cut all veggies to about 1" chunkss. Coat generously with olive oil. Place in bbq basket and cook over med/high flame until veggies begin to soften. Then begin sprinkling seasoning. Do not cook to soft state. This cannot be left unattended even for 30 seconds. It seems whenever I turn my back they burn like rocket fuel.

While the brown rice is bubbling on the stove, onions, carrots, garlic, chickpeas, and mushrooms are sauteed in butter until cooked and the flavors are mingled. Eggs are swirled into the pan, the rice is added, and then a nice smattering of parsley and cashews.

I saved this quite some time ago just because it had such bright veggies, but once again, I haven't gotten around to trying it yet :)
