I need an idea for a potluck this weekend. I have no idea who is bringing what…we were just told to bring something. Main, dessert, side?? I have to knock off the socks of these ladies!!! Please help me with your BEST recipe! Thanks!

My husband likes spicy dishes, and this is one of his favorites. He usually takes what's left to work for lunch the next day. We have a 4-year-old son, and this is the only way we can get him to even touch beans!

These have been very popular. Cook the bacon first and mix up the day before.

Hi, why not this with pitta bread or baked potatoes. Different??? Maybe - but delicious. cheers

Mediterranean Beef Chilli 300g Minced Beef 2 slices Pancetta (or unsmoked bacon) - chopped 2 tbsp Extra Virgin Olive Oil 3 cloves Garlic - finely chopped 1 large Onion - finely chopped Dried Spice Mix of 1½ tsp Paprika, 1tsp Oregano, ½ tsp Coriander, ¼ tsp Cumin, ¾ tsp Chilli Powder, ¾ tsp Cayenne Pepper 1 x 170g tin Tomato Puree 2 x 400gr tins Italian Plum Tomatoes - chopped 1 x 400g tin Red Kidney Beans - in Water Liberal splashes of Worcestershire Sauce - to taste To Serve: Pitta Bread - Baked Potato Method Heat oil in a large pot/pan, add pancetta and cook gently for 3 to 4 minutes until bacon is golden but not crispy; Add Onion, Garlic and continue to cook gently, stirring occasionally, for some 3 to 4 minutes or so until the onions soften a bit; Add spice mix, combine well with onion mixture and cook, stirring continuously, for further 1 minute; Add mince and, stirring continuously, break down and brown slightly for 4 to 5 minutes or so until NO LUMPS; Add puree, stirring in quickly to avoid burning; Add tomatoes, Worcestershire sauce and kidney beans, stirring continuously to mix well; Bring to boil, reduce heat and simmer, stirring occasionally, for about 45 minutes to an hour.

Wow, tough one! I would probably bring my greek couscous salad. It makes a lot (use your largest salad bowl), it's tasty and very pretty. To make it over-the-top I would add some grilled shrimp, marinate in Greek dressing.

this salad is very good. many compliments and request for this recipe. I took it to a potluck at camp. and I jsut kept all the ingredients separate and than threw it all together at party so everythhing stayed cispy
