I bought some fresh asparagus and never used them. Can I freeze them fresh?? Don't feel like cooking them or blanching etc. I will if I have to. Husbands gone on the road and the kiddo doesn't care for them. No sense in cooking a pound up as a side dish or in an entree since she wont eat it. So, can I freeze fresh? Or must I cook it somehow? Thanks everyone!

Had the same problem once with asparagus also had some leftover mushrooms. Did not blanch froze as is stir fried it in EVOO with garlic and served it on pasta with some Parmesan cheese. It was great!!!

Sounds like Sue knows her stuff but Lindsay, put them on a sheet pan, in a single layer, Then freeze. Once hard, transfer to zip lick bags. Individually frozen so you can cook only what you want to.

Hi L. never frozen asparagus but Have a thought. poach in water 5 minutes. cool, cut into 2 or3 in bits and freeze in bags, remove and defreeze --- then make a soup or roast in oven in butter then add to another side if family afraid of eating. I would roast, add some little roast potatoes and add a fried egg on top. hope helps. cheers.
