Tomorrow is Orthodox Christmas. We always have seafood. Planning on this; but looking for an easy dessert ( no chocolate ) Was thinking of a mousse? Any suggestions? TIA.

A traditional, easy, and delicious Italian custard. I had a difficult time finding a good and easy recipe on the internet, so I made up my own recipe. It tastes just like the panna cotta served at Italian restaurants. Serve with warm hot fudge sauce and fresh raspberries on top. This keeps well for several days in the refrigerator.

hi misty, Merry Christmas :) No mousse suggestions. How about an Italian custard? Very simple and delicious. There are lots of recipes.

Hi, found this. Worth a try. cheers. Caramelised apples with ice cream Everyone loves hot apple pie and ice cream! This dish is based on the same perfect pairing, but without the faff of making pastry. The ice cream is a doddle (no gadgets required) and the caramelised apples heavenly. A perfect treat to round off any supper. Ingredients 4 cooking apples 1 lemon 8 tbsp golden caster sugar 1 litre/1¾ pints ready-made vanilla custard 50g/2oz butter 4 dessert apples Preparation method Put a medium sized oven tray in the freezer. Peel, core and chop the cooking apples and add to a deep pan with the juice of a lemon and four tablespoons of golden caster sugar. You can even leave the squeezed lemons in the pan. Pop the lid on and bring to a simmer for 10 minutes. A bit of texture is welcome in the ice cream so don’t let the apples soften to a purée. Tip the cooked apples into a large bowl, pour the ready-made custard over and fold together. Tip the mixture into the chilled tray and freeze for two hours, giving it a stir at the halfway stage. When the ice cream is almost frozen, peel and core the dessert apples and cut into segments. Warm the butter in a frying pan and add the apples with the remaining four tablespoons of golden caster sugar. Turn them occasionally making sure that all the apples are evenly caramelised, which should take 10 minutes or so. Serve the piping hot apple segments with the home-made apple ice cream

Sounds delicious to me !! Question: What are dessert apples? I have some golden delicious and red delicious on hand? Will they work?

Hi, yes, both should work, probably red delicious are sweeter dessert apples are really just sweet apples. cheers.

My family rated this a "5". Here is a copy of my review. "Very good! Nice and moist. I used a food processor to shred my carrots and it worked well. I was a bit over 3 cups, but it didn't make a difference. I think it may have been good with some raisins in it. When I made the frosting I only used 3 cups powdered sugar because we don't like things overly sweet here. The frosting was divine! Cake was a big hit at Easter!"
