This cake was created for Reds Espresso Gallery of San Diego, in the Maui test Kitchen on Puunoa! It was first made with bananas from the back yard...yummy!

i don't like my ole tube pan - how do you think it would be in a 9 x 13?? timing adjustments??thanks-judy-

hi there judy :) the batter will be more shallow in a 9x13 pan vs. a 10" tube pan. Baking time will be less but I didn't figure how much less. I love this reference:

I don't find charts with sizes by volume very helpful. How many people really measure water into a pan to see how many cups it holds? Especially since you don't fill the pan to the top with batter or it would overflow when baking. I know I don't. What I'd like to see is a simple chart that says "instead of one 13 x 9 pan, you can use two 9 inch round pans, or instead of a 10 inch Bundt pan, you can also use two 9 x 5 loaf pans, etc." I would find that much more helpful :)
