If soup recipe calls for a ham hock - do I buy a raw one or smoked? What could I use if I cant find the ham hocks? Thanks in advance, Teygo's Mom

Good question! I guess it would depend on the recipe. The smoked one tastes like ham. If you can't find it, I would just sub ham.

check out smoked turkey parts- depending how much of the actual meat you want you can buy accordingly- if it is just for the flavor- you could get a wing- a bit healther- same basic flaver- i use it alot if i don't want to cook a whole ham- hocks ar too pricy for my use:-)

Is there a difference when using raw vs smoked ham/turkey parts?

yes- you will need the smoked-(cooked & smoked) ham is basically "cooked" in the smoking process- raw ham is basically pork- like a roast-- i will see if i can find some info- i know i am not explaing very well-

this explains the process- ham is basically "cooked" because of the curing- i.e.- you can eat ham when you buy it- but cooking enhances the flavor- same with smoked turkey- it is cooked

Thanks Nanny129 - that website was very helpful. Looks like I'm just fine going with a smoked ham hock. I live in Chicago, but have great difficulty finding ham bones. I've always wondered if smoked hocks were problematic due to excess fat, but you just can't beat the flavor. I appreciate your help. Thanks again
