I put some canned artichokes in colander to drain, how long can they sit until they start to turn brown or will they? I didn't think about that until now. Wasn't planning on putting the dip together until later, eep! Thank you and Happy New Year!

Water, and I rinsed them. I don't make things with artichoke very often, can you tell?

If I spritz some lemon juice back over and frig until later, they should be ok?

I have never had any problem with canned artichokes browning. I drain them in the fridge all day to get them as dry as possible. I think the added salt preserves them the same as lemon juice would.

I wouldn't expect them to brown on their own so much as get hard and crusty. They should be fine in the fridge until you need them! :)

That is, hard and crusty if left out unrefridgerated...
