My cookie recipe calls for brown sugar but I have none in the house and I'm baking now! I have white sugar - can I use that instead?

You can make your own brown sugar if you use white sugar and about a tablespoon of molasses per cookie recipe - or just add molasses until the sugar is as dark as you prefer -

Someone told me this the other day and I did it today. Turned out perfect. It said 1 TBS molasses to a cup of white sugar for light brown sugar or 2 TBS per cup for dark brown sugar.

Depends on the recipe. The molasses in brown sugar is important in some recipes for the right flavor and texture.
