If you can find a recipe for Kale chips they would be good for a snack before lunch or dinner.

We love this brussel sprout and kale salad. It is a nice salad for special occasions, too.

You can use it in smoothies as a substitute to spinach (might lean toward combining w/ sweeter fruit), and it probably would sub well in a spinach lasagna but haven’t tried doing that yet. Look for salads or other dishes that call for broccoli as these too are likely substitution candidates.

it says spinach in the recipe but traditionally it is kale, really good soup, I use fat free evaporated milk for the cream.

This is very good. We add chopped almonds and smoked salmon and turn it into dinner.

This recipe was adapted from one of my favorite methods of preparing broccoli and cauliflower - roasting at high heat with the bold flavor of chili powder. The result with kale is a little outrageous - fiery flavor with a unique crispy texture!
