I just realized I used evaporated milk when I should have used regular milk in my cocount pie. It has puffed up quite a bit in the oven. Is it ruined? I'm going to have to take it out of the oven and it's supposed to cook about 14 more minutes but it's getting very brown and the outer crust has broken off. Think it will be any good?

I work check the doneness and don't bake till it is Completely cooked. A little wiggle quarter size will be good.

Looked at this for a bit, and was left with the impression that you may have improved on the recipe. A concentration of flavour like this is seldom incorrect, and your volume of liquid is consistent with the original recipe. Would love if you would give us an afteraction report on the result! Might be a tad undersweetened, but its going to take a pretty picky taster to come out with that, as it will be all that more "richer" in flavour, so I would suggest you serve with a straight face, and take note of the comments, reporting them here...

CL you are quite right! It wasn't as sweet. I thought it might be too sweet so I was good with not as sweet. I thought it brought out the flavor of the coconut more. I liked it and I guess everyone else did too because it was eaten quickly and everyone said it was great!
