The Cilantro problem. It doesn't keep long. We received 3 bunches from the food bank yesterday. Wow. We eat a lot of Mexican food at our house. I'm bound and determined to not let this gift go to waste. So I cut off the stems and have it in the second water rinse. I recall seeing something recently about making Cilantro ice cubes. Any ideas? How would you preserve it? Thinking about using the food processor. How much water/cilantro ratio do you think? Fifty-fifty?

Just saw this in Food & Wine magazine this month...what a great idea for ice cubes for bloody mary's that don't dilute the drink I thought to myself. I'm thinking you can tweak this recipe for your cilantro!

You could also dice some up and toss it with a salad.

Make a pesto, that will last a bit longer. I really just keep cutting my stems a bit more and change the water and mine will last quite awhile, I do put a lose fitting plastic green bag over the glass also. I've tried mint ice cubes before and they lasted a good few weeks.

Thanks Indiana Peggy. My guy just left for work and one of his comments was "Make sure you process that cilantro" We have some almonds to use up and some fresh lemon. Hmm. I was worried about Christmas and no dollareenies. Looks like it's gonna be a few-some recipes from AR Christmas.

I bought the flexible ice cube trays and it makes it real easy to pop out the pesto! Freeze my basil pesto all the time!
