Now I'm curious abt refrigerating extra sw cond milk (Happy Chef asked earlier). It was never an issue because I always used the whole can. What would happen if you just left it out (in plastic) on the counter?

It will probably mold, will definitely get full of bacteria. It is still milk. Needs to be refrigerated. Good for about a week in frig. Freezing it tends to separate it into watery mess.

You're making my brain hurt. Once it's added to something and cooked it would be ok to sit out. The extra sugars added with candy and cookie bars also stabilize it after cooking. Depending on what else is in those, they might also need refrigeration.

Thanks for the info. I have not really used sweetened condensed milk in cooking and was going to make these tomorrow and didnt know if i should keep them in the frig. =) It says "milk" in the name so thought I'd check! =D

I think they'd be fine to sit out once you cool them down. They won't last long once you put them out anyway right?

If they get too soft or start to melt you may need to keep them in the frig until you serve them.

Sweetened condensed milk is a cooked product and safe at room temps.

My ex husband used sweetened condensed milk in his "health" shakes (can't explain the reasoning). He would leave the opened can on a shelf in the cupboard. It never went bad.
