Maybe something like the stuffing for this? This is great in the tomato btw. I don't care much for peppers, but loved this.

These quinoa and apple stuffed peppers are fresh tasting and healthy. They make a great side dish or a meal on their own.

I used this recipe when i was on atkins....very yummy. ground the beef, add onions, garlic, mushrooms etc, then a can of tomoate paste with a bit of beef juice, slice the bottom of peppers after cleaning out so they sit up straight. add cheese, mozz, cheddar, and/or parm. some to the empty bottom of pepper then some over the top. pour beef in and around and then cover with lid or foil and back or newk for a while..... over at about 350 for an hour ish. you can add a few red peppers if you like spice when it is in frying pan.

ooops that would be bake not back...sorry.and that would be brown the ground beef.....lol sheesh...i will proof next time....

hubby doesn't like rice in stuffed peppers- i just make regular meatloaf mixture and use that:-)
