What is the best Candy Thermometer that you can buy? Im making Peanut Brittle for the first time and need to get one, so the brittle turns out heavenly! THANK YOU!!

I don't know if cost is an issue, if not, then I would buy a Thermapen. I asked my hubby for one for Christmas a couple of years ago. With one of these you don't need a meat thermometer, a candy thermometer, etc. This baby can do it all.

It is not cheap but it is the only thermometer that you will ever need. I just love mine

I have a Wilton and like it because it's sturdy metal and protects the glass tube...haven't had any issues with it, seems to be right on temp...paid $20 for it...best of luck!

In addition to the temperature, watch for high humidity, as this can also affect candy.

Boiled sugar recipes are VERY fussy due to room temp/humidity and how you cook the mixture. Buying an expensive candy thermometer is really no guarantee of success. Look for proven recipes that say to cook until it reaches x degrees, rather then 'boil for a few minutes' or other similar vague instructions. Good that you plan to use a thermometer instead of the inaccurate 'blobs of hot sugar in ice water' method. Of all the recipes I have tried over the years, these by far are the most unpredictable.

Even a cheap candy thermometer will work. The important part with every thermometer, every time, is to check it. Boil water with the thermometer in it. At a full rolling boil, it should read 212. So if it doesn't, you need to adjust your recipe temp however many degrees it's off.. (ie at a boil the thermometer reads 205, you need to take off 7 degrees from what the recipe states)

I have a cheapy one from the $1 store and have been using it for years to make candy (blobs of sugar in cold water is good for a few recipes, but peanut brittle is more of a tried and tested recipe-do now get discouraged if it does not turn out first time, make another batch). It has the clip for the side of the pot and the thermometer is encased in glass tube for protection. Not sure if you need to spend much on a therm, just ensure that the temps are right-boil water and test it out.
