HongKongCV is looking for: (19 recommendations)
I know it's nearing bedtime on a sunday night, at least where I am, so I may repost this tomorrow if I don't get any responses. That said, I want to make a romantic dinner for my beloved bride... but I want it all to be light. Nothing too filling or heavy, nothing cloyingly sweet or incredibly rich. I am open to any suggestions for this three course meal: appetizer, main dish, and dessert.

Japanese Onion Soup

The basic Japanese soup that's given out as an appetizer at most Japanese restaurants. Very mild, a bit salty, and a touch of tang. It's a very improvisable recipe; most of the ingredients' quantities can be changed according to taste.

I stumbled across this soup for an appetizer... it's light and tasty, as I want for the rest of the menu.

Chicken is browned and simmered with marinated artichoke hearts, mushrooms, white wine and capers. A simple, savory aromatic treat.

This golden, glossy delight could not be easier to make. All major varieties of pears - Bartlett, Bosc, red, Anjou - work equally well. However, Bosc roasts up slightly firmer than the others.

These coconut shrimp come out perfectly crunchy. You'll wonder why you ever fried them at all!

This as a main with either mashed potatoes or white rice.

Hard to say, without personally knowing either of you, but I'll give it a stab... For an appetiser, I'd say go with seafood. That might mean something as simple as a tuna salad with a green olive on top, or, in Alabama, you'd have quick access to shrimp,(steamed, fried?) or oysters (fried, raw, soup?) Set it off with a mini bottle of Chardonnay (you can get this in 8-10 oz miniature bottles; worst case, you can buy it in a "box" and the wine will keep for some time) An Entree? Well women like to keep their figure, so low fat is the way to go. Tenderloin would be my pick, as its at least "difficult" to ruin good meat. Portion size would be the size of the palm of your hand, thickness about 3/4", drizzled with EVOO, let to sit in Worcestshire and soya sauce for ten minutes or so. Baby red potato, boiled and split, asparagus, grilled, maybe a carrot to give the plate colour... If your lady is not into beef/red meat, take a look at Chicken Cordon Bleu or Chicken Kiev, these aren't terribly difficult to make but do have an appeal to the fairer sex... If cost gets to be a factor, them Spaghetti and Meatballs or Lasagna (I would be writing all night on these!) Merlot with the steak (scattering it with some bleu cheese works, too) or more Chardonnay with the chicken, or a really dry and "dusty" chianti with the Italian is a good wine choice. Dessert: Women live for CHOCOLATE! Think outside the typical "box" for a minute... Buy a Bosc pear, split it in half, de-seed and de-stem it (and maybe even skin it) drizzle it with a bit of brandy (you can buy brandy in one ounce servings) and just heat it up to "warm" before covering with a shot of clotted ("Devonshire") cream and some melted chocolate sauce. Coffee with good creamer, spiked a bit with the leftover brandy... I am tempted to say that if this doesn't get youwhere you are going, I'll come down there and do the job myself! (except I'm a little to old to do that)... Good Luck!

A homemade raspberry sauce - made with fresh and frozen raspberries and orange liqueur - finishes this creamy lemon dessert.
