Bought a loaf of chabatta bread for a sandwich that I made the other day that reviewers suggested would be the best to use. Well I used it tonight and it was delicious. I dont think I have ever had that kind of bread before. Now I have the rest of the loaf and I dont know what else to do with it. Will it freeze okay? What do you make with this bread? Ill post the recipe I used inside if you are interested.

Fresh, ripe tomatoes are marinated in olive oil and balsamic vinegar, then broiled with Parmesan cheese on toast. Serve warm with a bowl of soup, if desired.

I added fresh basil and fresh spinach the second time around and it was delicious!

I love ciabatta! It's really great toasted to use with hot dips. I slice it pretty thin, brush it with olive oil, and sprinkle with sea salt and pop in a hot oven just to toast a bit. It won't take long.

Hi, try this. cheers. Pizza Style Savoury Cheese on Toast Serves 2 1 Tomato - finely chopped ½ Onion - finely chopped 120g/4oz Cheddar/Parmesan Cheese mix - grated Pinch Ground Cumin Small Piece (knob) Butter 1 to 2tbsp fresh Cilantro or medley of herbs (Oregano/Basil/Parsley) - finely chopped Pinch Chilli Powder 2 slices Ciabatta Bread - but can use any firm bread Mix all ingredients together in a bowl; Toast bread on both sides; Spread cheese mixture on toasted slices, making sure toast is completely covered; Place under grill until cheese bubbles and browns slightly; Serve hot.
