Could you look at poacing your salmon in milk and butter? Some minor herbs in there like dill and/or basil, should be mild enough for him to enjoy?
For chix, you could marinate in yoghurt that might fatten as well as tenderise (buttermilk would be the other thought, but yoghurt does well on a grill)
I'm sort of understanding his issues, and smoking may give extra problems (or perhaps not!), but if you sort of started at the lowest level, and built him up, to understand what he could tolerate, as opposed what caused an issue, you migt be able to get somewhere with him.
Tough row to how,,,but going a step at a time from "basic" before you get to "ludicrous" is probably the answer.
After 33 years of marriage, DW finally, tonight, accepted that I might be able to get her to eat "cabbage" in the form of cabbage rolls, if I bought or made same this weekend, and she finally admitted that she doesn't like cabbage because of one stupid cook up 50 years ago...
