hello all first time asking.... i have father inlaw that has sensitive stomach, nothing with seeds (ground pepper mustared seeds ect) only eats plain food grilled...plain salmon plain chicken, you get the point is there a way to flaver a chicken leg,thigh,steak,fish, by smoking it in a smoker? i have tryed marinading in red wine vineger, mustared,soy sauce(of course in combo mixes) but they just dont have that kick it should have like it dose for the rest of us that can enjoy the full flavors of pure seasoning. can some one help?

Take a look at "Grilled Lime Cilantro Ahi with Honey Glaze". I believe this marinade/sauce would be fine on salmon.

HMM. Could you look at poacing your salmon in milk and butter? Some minor herbs in there like dill and/or basil, should be mild enough for him to enjoy? For chix, you could marinate in yoghurt that might fatten as well as tenderise (buttermilk would be the other thought, but yoghurt does well on a grill) I'm sort of understanding his issues, and smoking may give extra problems (or perhaps not!), but if you sort of started at the lowest level, and built him up, to understand what he could tolerate, as opposed what caused an issue, you migt be able to get somewhere with him. Tough row to how,,,but going a step at a time from "basic" before you get to "ludicrous" is probably the answer. After 33 years of marriage, DW finally, tonight, accepted that I might be able to get her to eat "cabbage" in the form of cabbage rolls, if I bought or made same this weekend, and she finally admitted that she doesn't like cabbage because of one stupid cook up 50 years ago...

There are stove top smokers available. They do a nice job with the food and easy to use. You can get woot chips at the place you but the smoker. I have used a cast iron one for several years and am totally pleased with it. It waS expensive, though. There are sheet metal ones that work the same way but will need replacing after so much use or too high heat. You can begin with tis link. ...
