I've figured out that potatoes I buy shrivel up so fast because my apt is so dry. I want to use some for split pea soup. I remembered they can be cut up, put in water, and kept in refrig. What's the longest they can be kept? I think my mom left them uncovered, but maybe so she'd remember to make them?! Thanks.

Hi you can keep them in the fridge,covered for about 1 day.if you have to keep them a little longer,change the water.

Do you need it right now? Part of the problem is that I loved what I made last spring/summer and am not sure I wrote down what I did. I could give you generally what it is, if you want it right now. Also, I am VERY glad you asked because now for sure I will make it before the week is out!

And is it better to keep them in Tupperware or a metal bowl? I've almost become obsessed picking up sm-lge metal bowls at "my" thrift store, esp from old stand mixers. Amazing how much I use them for in kitchen!

I'll write down what I do and critique results! Also, for future reference, I'm fine abt giving out recipes. The only ones I've been kind of protective about over the yrs are a couple I grew up w/ (because I've never see them from anyone besides one of my sisters - and ours are v different because I use butter!). But given that I don't plan on selling stuff, there's really no reason I have to keep them to myself.

Emeralds, instead of storing your potatoes "out", keep them stored in your fridge. Works wonders for storing for a long time!

Yes, I meant to ask this last night. I always hear abt the dangers, that they get green, but if I'm ok w/ cutting off green part of the potato, why not store in refrig? Otherwise, I just have to toss shrivelled ones!
